Chipotle Barbacoa

Ingredients

  • 3 lb Bottom Boneless Round Center Cut Roast
  • 4 Chipotle Peppers In Adobe Sauce
  • 1 cup Onion
  • 1/4 cup Lime Juice
  • 1/4 cup Tomato Paste
  • 4 Garlic Cloves
  • 1 1/2 Tbsp Apple Cider Vinegar
  • 2 tsp Cumin
  • 2 tsp Sea Salt
  • 1 tsp Oregano
  • 1/2 tsp Ground Cloves
  • 3/4 cup Beef stock
  • 3 Bay Leaves

Preparation

Step 1

Trim beef of any fat and place in slow cooker. Combine chipotle peppers, onion, lime juice, tomato paste, garlic, vinegar, cumin, salt, oregano and ground cloves in a food processor and pulse until smooth. Pour sauce over the beef. Add stock and bay leaves to the slow cooker. Cover and cook on high for 4-5 hours.

Remove beef and shred using two forks. Return meat to the slow cooker and cook for an additional hour, or until perfectly tender.

Serve in a taco, burrito, or as a salad. Include toppings such as black or pinto beans, salsa, cheese, sour cream or guacamole.
