Jarlsberg Oven Omelette

  • 8 eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground white pepper
  • 1/8 teaspoon ground nutmeg
  • 2 ounces thinly sliced prosciutto or cooked ham, cut into strips
  • 2 1/2 cups (10 ounces) shredded Jarlsberg cheese, Gruyere cheese, or Samsoe cheese
  • 1 tablespoon butter, melted

A favorite in my home for Christmas-morning brunch, this fast-to-assemble oven omlette is laced with melted cheese and ribbons of prosciutto. It can be assembled in advance. With fresh-baked panettone and a platter of fresh fruit-sliced oranges, bananas, kiwifruit, and strawberries--it makes a festive holiday meal.


Preheat the oven to 350 degrees F. Butter a 6-cup baking dish about 10 1/2 inches in diameter.

In a large bowl, beat the eggs with a whisk just until blended. Mix in the milk, salt, pepper, nutmeg, prosciutto or ham, and cheese. Pour into the prepared dish. Drizzle the top with melted butter. Bake in the oven for 30 to 35 minutes, or until set and lightly browned.
