Ingredients
- 1 medium onion, cut into chunks
- 2-3 eggs
- 3 large potatoes, peeled, cut into chunks (about 1 1/2 lbs)
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 3 tbsp matzo meal or breadcrumbs or flour
- 1/2 cup sunflower oil, or other vegetable oil
Preparation
Step 1
Place onion in food processor fitted with steel knife; chop on/off until finely chopped. Add eggs and blend. Add potato chunks and process on/off until potatoes are chopped into onion/egg mixture and there are no large pieces of potato left. (Or, use grater blade to grate the potatoes.) Blend in salt, pepper and matzo meal.
Heat about 1/4 inch of oil in large, non-stick skillet; add batter by the tablespoonful, flattening with back of spoon. Cook until browned and crisp; turn and cook second side. Drain pancakes on racks (or on paper towels, but that makes the bottoms a little soggy) and eat quickly.
