Ingredients

    cups sliced rhubarb

  • 1

    cup sugar

  • sprinkle of cinnamon

  • 4

    Tablespoons frozen orange juice concentrate

  • 1

    yellow cake mix

  • 1

    pint whipping cream

  • 9

    x 13 greased, glass cake pan

Directions

Reheat oven at 350 degrees. Put 4 cups of sliced rhubarb in bottom of a greased glass pan. Add sugar evenly over the rhubarb. Spoon orange juice concentrate over rhubarb and sugar. Sprinkle with cinnamon. Prepare 1 yellow cake mix according to box directions and pour over top of sugared rhubarb. Pour 1 pint of whipping cream (right from the carton) over the top of the batter. Do not stir. It looks like too much, but don't worry. Bake at 350 degrees for about 50 minutes to 1 hour or until test done. Note: I bake it in an ungreased polish pottery 9x13 pan and bake until the top is brown and bounces back.
