Coconut Meringue Pie

Ingredients

  • 4-1/2 Cups of Milk
  • 2/3 Cup of Flour
  • 6 Egg Yolks
  • 2 Teaspoons Vanilla
  • 1 Cup Sugar
  • 1 Bag Coconut
  • 1 Teaspoon Butter

Preparation

Step 1

Mix Milk and Egg Yolks togetherand place in microwave until hot. In seperate bowl mix sugar and flour. Mix all together. Place back in microwave for 2-1/2 minutes. Remove and mix in coconut and place back in microwave for 2-1/2 more minutes. Add Butter and Vanilla and pour into pie shells. Allow to cool before adding meringue.

For meringue add 3/4 cup of sugar to remaining egg whites and beat until stiff.
