Ingredients
- For the crust:
- 3/4 pound butter at room temperature
- 1/2 cup powdered sugar
- 1 3/4 cups all-purpose flour
- 1/4 teaspoon kosher salt
- For the filling:
- 3 extra-large eggs at room temperature
- 1 1/2 cups granulated sugar
- grated lemon zest (1 lemon) optional
- 5 Tbl. cup lemon juice
- 3 Tbl. flour
- 3/4 tsp. baking powder
- Frosting:
- 2 cups powdered sugar
- 2 Tbls melted butter
- 1 Tble. lemon juice
- add tiny amounts of water to make spreadable.
Preparation
Step 1
Preheat the oven to 350 degrees.
For the crust, mix crust ingredients for crust and press into a 9 x 13 pan. Bake 15 min. at 350 degrees.
For the filling, Stir together flour, sugar, and baking powder. Beat eggs well; add juice and rind. Add to flour mixture and pour over hot crust. Bake 25 minutes (or until the filling is set) at 350 degrees. Let cool completely.
For Frosting: Mix all ingredients (but add tiny amounts of water until the right consistency for spreading) and spread on cool bars.
