  • 4 to 5 lbs fresh string beans
  • 2 large onions medium chop
  • 1 yellow bell pepper medium chop
  • 1 red bell pepper medium chop
  • 2 stalks celrey medium chop
  • 1 buch green onions
  • 4 to 5 cloves of garlic minced fine
  • 1/2 cup olive oil
  • 1 and 1/2 lbs smoked sausage, Andouille best but any good smoked sausage will do (cut in small pieces)
  • Tony Tony Chacheres seasoning 2 tablespoons give or take
  • 2 teaspoons pepper



Step 1

1. Clean string beans and cut off ends
2. saute all vegetables in olive oil in high heat
3. Add sausage and saute for a few minutes
4. Add string beans and 1/2 to 3/4ths of the spices and pepper
5. lower fire and cook until string beans are soft.
6. Add more tonys, Salt and pepper to taste
