Pan-Grilled Pork Chops w/ Pineapple Salsa

Ingredients
- 4 boneless center-cut pork chops
- 2 tbsp fresh lime juice (divided)
- 4 slices pineapple
- 1 medium red onion
- 1 tbsp minced jalapeno

Step 1
Combine pork with 1 tbsp lime juice. Let sit 10 minutes. Heat a grill pan over medium high heat. Coat pan with Pam. Add pineapple and onion; cook 4 minutes until onion is tender.
Coarsely chop pineapple and onion; combine in bowl with balance of lime juice, jalapeno and 1/8 tsp salt.
Sprinkle pork with 1/4 tsp salt/pepper. Cook on grill pan 4 minutes on each side or until done.
Serve with salsa and white rice.
