Ingredients
- For the glaze:
- 2 (5-pound) chickens
- Salt and pepper
- Olive oil
- 1 cup pineapple juice
- 1/4 cup honey
- 2 jalapenos, minced
- 1/4 cup tequila
- Juice of 2 limes
- 1/4 cup pineapple preserves
Preparation
Step 1
1. Preheat oven to 375 degrees. Rinse and pat dry chickens. Salt and pepper the cavities and place both chickens in a roasting pan. Salt and pepper the outside of chickens and drizzle a little olive oil over them. Cover
the roasting pan and bake for 1 hour.
2. Prepare glaze by combining all glaze ingredients in a saucepot and simmering over low-medium heat for 10 minutes. Stir frequently to prevent burning or sticking.
3. After chickens have baked for 1 hour, remove cover from roasting pan and brush glaze over both chickens. Bake an additional 15 to 20 minutes until golden brown.
