Roasted Pork and Potatoes with Creamy Applesauce

Ingredients
- 1 1/2 lbs- small red-skinned potates-halved
- 1 red bell pepper- cut into 1" pieces
- 2 tsp- fresh thyme
- 1 1/2 tbsp- EVOO
- 1 cup- applesauce
- 1/4 cup- sour cream
- 1 1/4 to 1 1/2 lbs- pork tenderloin, cut into 4 pieces
- salt and pepper
- dash of nutmeg

Preparation
Step 1
1. Preheat oven to 375. toss the potatoes and bell peppers with thyme, 1 tbsp EVOO, 1/2 tsp salt, and pepper to taste in a shallow baking dish. Transfer to oven and roast until slightly tender (about 10 minutes).
2. Mix applesauce, sour cream, and nutmeg in small bowl and set aside.
3. Pat pork dry and season with salt and pepper. Heat 1/2 tbsp EVOO in a large skillet over medium heat. Add the pork and sear until browned on all sides (about 6 minutes). Transfer pork to baking dish with the vegetables and continue to roast until registers 145 degrees (about 15-20 minutes).
