Southwestern Chicken

Ingredients

  • 2 - cans 15oz corn drained
  • 1-2 cans 15oz black beans, rinsed, drained
  • 1 jar 16oz chunky salsa
  • 6 - boneless chicken breasts
  • 1 c low fat shredded cheddar cheese

Preparation

Step 1

Combine corn, beans and 1/2c of the salsa in slow cooker. Top with chicken. Pour remaining salsa over chicken. Cover and cook for 7-8 hours on low.

Sprinkle with cheese. Cover for 5 minutes to melt cheese.
Serve over rice or shred chicken and serve in warm tortillas.
