Tomato soup

  • 2 large onions
  • 1 bunch celery
  • 12 1/2 lbs tomatoes
  • 1/4 cup salt
  • 1 cup flour
  • 1 cup sugar
  • 1 cup butter



Step 1

Cut up & boil until tender:
2 large onions
Add to 12 1/2 lbs tomatoes which have been cut into chunks.
Cook until done

Blend in blender until juicy but not pureed, press through sieve

To juice add
1/4 cup salt*
1 cup flour*
1 cup sugar*
1 cup butter

To prevent lumps, mix these 3 ingredients together before adding *

Mix until well blended and return to heat until ingredients begin to boil.
Stir constantly
Ladle hot soup into jars anbd process in boiling water bath 15 minutes for pints and 25 for quarts
