Rum Cake

A bitter sweet treat with coffee to pick you up, marshmallows to bring out the child in you, and a little rum to keep you having fun!

Ingredients

  • 2 pkg. miniature marshmallows
  • 2 Cups strong coffee
  • 2 pts. heavy cream
  • 2 1/2 pkg. ladyfingers
  • 1/4 cup rum (if more is desired, reduce amount of coffee)

Preparation

Step 1

In a large sauce pan, heat coffee on medium-low. Add 1/2 bag of marshmallows at a time to coffee allowing them to dissolve completely. Cool mixture. Whip cream until fluffy and then add in rum. Combine cream mixture with marshmallows. Completely line spring form pan (bottom & sides) with ladyfingers - then pour liquid mixture in.
Note: May make ahead and refrigerate.
