Whole wheat bread

A basic earthy & delicious whole wheat bread. Crusty and good with butter or honey or on sandwiches.

Ingredients

  • 3 3/4 cups lukewarm water
  • 4 Tb butter or coconut oil
  • 6 Tb sugar, honey or maple syrup
  • 5 cups whole wheat flour
  • 2 cups all purpose flour
  • 4 Tb bakers dry milk
  • 1 Tb kosher, sea or bread salt
  • 1 1/3 cups chopped walnuts
  • 10 Tb vital wheat gluten
  • 1 1/2 Tb yeast

Preparation

Step 1

Mix ingredients in a stand mixer on speed 1 for 10 min & speed 2 for 10-15 min. Slap knead the bread until pliable. Put in bowl & let rest for 2-3 hours or
Put ingredients in a bread machine on dough cycle
Punch down the dough and shape into loaves either boules, squares or loaf shaped and place in bakers, baskets lined w/ floured linen or in loaf pans & cover & let rise for 1-3 hours. Score the loaves and bake ( may top w/ seeds or oats) and bake in steamed oven at 450 degrees for 7 min & then 425 degrees for 13-18 min. Remove loaves & cool on racks.
