Ingredients
- 1 1/2 c ripe mashed bananas
- 2 t lemon juice
- 3 c flour
- 1 1/2 t baking soda
- 1/4 t salt
- 3/4 c softened butter
- 2 1/8 c sugar
- 3 large eggs
- 2 t vanilla
- 1 1/2 c buttermilk

Preparation
Step 1
Preheat oven to 275'. Grease and flour 9x13 pan. Mash bananas with lemon juice. Set Side.
Combine flour, soda, and salt. In another larger bowl combine butter and sugar, cream till light and fluffy. Beat in eggs one at a time. Stir in vanilla. Beat in flour alternatively with buttermilk. Stir in bananas. Pour into prepared pans. Bake for 1-1 1/2 hours or until toothpick comes out clean. Place in freezer for 45 minutes(makes cake moist).
Frosting:
1/2 c butter
8 oz cream cheese
1 tsp vanilla
3 1/2 c powdered sugar
Cream butter, cream cheese, add vanilla, then sugar. Beat at low speed till light and fluffy. Frost cooled cake. Sprinkle with chopped walnuts if desired.
