Chicken Breasts in Clinatro & Parsley sauce
- 2 Shallots, peeled
- 1 tsp Red pepper flakes
- 1 tsp dried oregano
- 1 cup chopped fresh cilantro leaves
- 1 cup chopped fresh parsley leaves
- 3/4 cup chicken broth
- 2 tbsp olive oil
- 4 boneless, skinless chicken breasts halved
To prepare sauce place the shallots, pepper flakes, orangano, cilantro & parsley in blender. Add a little chicken broth; cover & process. Repeat until all the broth is used; set aside.
Heat olive oil in large skillet over medium heat. Sprinkle chicken on both sides with salt and pepper. Brown chicken on both sides. add sauce and cover and cook about 5 min on each side until tender and no longer pink.
