SPICY RICE

Ingredients

  • 3/4 cup uncooked long grain rice
  • 2 cups water divided
  • 15 bacon slices
  • 1 medium onion chopped
  • 2 celery ribs thinly sliced
  • 2 small carrots thinly sliced
  • 1/2 cup frozen sweet green peas thawed
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon ground red pepper
  • 1/4 teaspoon seasoned pepper

Preparation

Step 1

Bring rice and 1-1/2 cups water to a boil, cover reduce heat and simmer 20 minutes or until liquid is absorbed. Cook bacon in a large skillet until crisp, drain reserving 2 tablespoons drippings in pan. Saute onion, celery and carrot in hot drippings over medium high heat 3 minutes or until tender. Add peas, and saute 3 minutes. Stir in rice, remaining 1/2 cup water, bacon and seasonings and cook 5 minutes or until thoroughly heated. Serve immediately.
