Quick Whole Wheat and Molasses Bread

Whole Wheat and Molasses quick bread from Mark Bittman.

Ingredients

  • Butter or oil to grease pan
  • 1 2/3 cup buttermilk or yogurt
  • 2 1/2 cups whole wheat flour (12 oz)
  • 1/2 cup cornmeal
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup molasses

Preparation

Step 1

Preheat oven to 325 and grease your loaf pan.

Mix together your flour, cornmeal, salt, and baking soda in one bowl. In a separate bowl, mixtogether the buttermilk and the molasses.

Pour the wet into the dry and mix until just combined. Spoon/pour into the loaf pan and bake until firm and a toothpick in the center comes out clean, about 1 hour.

Cool on rack for 15 minutes prior to removing from pan.
