Rotisserie Pork Roast

Ingredients

  • Marinade:
  • 3 1/2 - lb. pork loin roast
  • salt
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons garlic puree

Step 1

Mix marinade ingredients. Cut shallow slits into both sides of roast. (This is to help the marinade penetrate the meat better.) Rub meat on both sides with small amount of salt. Put roast into large ziploc bag, pour marinade in, close bag, and marinate 8-10 hours in refrigerator, turning the bag a few times if you can.

**For Rotisserie - Place roast on rotisserie rod and insert into rotisserie. Cook about 20 minutes per pound, or until temperature on instant-read meat thermometer reaches 145 degrees. Let sit 15 minutes before cutting.

**For Oven Method - Roast at 375 degrees for 25 minutes per pound, or until meat thermometer shows 145 degrees, then let sit for 15 minutes befire cutting.
