Ingredients
- 2 15.5 black eyed pea cans drained
- 2 to matoes
- 1 cucumber
- 1 bell pepper
- 1 cup black olives
- 1/2 onion
- 1 cup fresh feta cheese
- 1/4 cup olive oil
- 1/2 cup red wine vinegar
- 1 tsp dijon mustard
- 1 tsp basil
- 1 tsp onion powder
- 2 tsp oregano
- 2 tsp garlic
- 1/2 tsp red pepper flakes
- salt and pepper to taste
Preparation
Step 1
Chop tomatoes, cucumbers, bell pepper, olives, onion, and feta cheese. Add to a large bowl.
Mix black eyed peas to salad.
Mix olive oil, red wine vinegar, mustard, basil, onion powder, oregano, garlic, and red pepper flakes together in a separate bowl. Pour over salad.
Mix Black Eyed Pea Greek Salad together well. Refrigerate an hour or more to allow the flavors to build. Salt and pepper to taste.
