Ingredients
- 3 cups flour
- 2 tea. baking soda
- 1 tea. baking powder
- 3 tea. cinnamon
- 1 1/2 tea. ground nutmeg
- 1 tea. ground cloves
- 1/2 tea. salt
- 1 1/2 sticks butter, softened (3/4 cup)
- 2 cups sugar
- 2 eggs
- 2 cups unsweetened applesauce
- 1 tea. vanilla
- 1 cup chopped walnuts
- 1 cup raisins (can use half Golden, half regular)
- 1 cup chopped maraschino cherries (at Christmas use half green and half red)
- GLAZE
- 2 cups powdered sugar
- 3-4 Tbsp. apple juice or milk
Preparation
Step 1
Preaheat oven to 350 degrees. Grease the bottom and sides of a regular or fluted tub pan and set aside.
In a medium mixing bowl, stir together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves and salt. Set aside.
In a large mixing bowl, cream together the butter, sugar, and eggs until light and fluffy. Gradually stir in the flour mixture, alternating with the applesauce, beginning and ending with the flour mixture.
Add the vanilla and mix briefly. Fold in the walnuts, raisins and cherries. Pour the batter into the pan, smoothing the top with a spatula to make it level.
Bake at 350 degrees for 1 hour and 10 minutes or until a toothpick inserted in the cake comes out clean.
Cool the cake int the pan for 10 minutes and then turn out onto a wire rack to cool completely.
Glaze: combine the powdered sugar and juice or milk in a small bowl. Stir until smooth and of the desired consistency. Spoon over the cooled cake.
