Ingredients

  • 1 lb. pork, cut into cubes
  • 2 TBSP flour
  • 2 TBSP shortening
  • 1/2 c. chopped onion
  • 1 clove garlic, minced
  • 1 can (16 oz.) tomatoes chopped (spicy Ro-Tel work good)
  • 2 cans (7 oz.) diced green chilis (can substitute one can of jalapenos for one can of chilis)
  • 1/4 tsp. oregano
  • 2 1/2 tsp. salt
  • 2 c. water

Preparation

Step 1

Dredge the meat in flour and brown in shortening in a deep skillet. Add onion and garlic and cook until onion is soft. Add the remaining ingredients. Cover and simmer for 1 – 2 hours, stirring occasionally. Remove the cover and simmer uncovered for 5 – 10 minutes or to desired consistency. If the chili is too thin, thicken it with some potato flakes. If it is too thick, add a little more water.
