Barbecue Sauce

Ingredients

  • 12 cloves garlic, smashed
  • 1 bunch fresh thyme
  • 5 sprigs fresh rosemary
  • 10 cinnamon sticks
  • 2/3 cup olive oil
  • 1 cup tomato paste
  • 2 cups ketchup
  • 1/2 cup red wine vinegar
  • 1 cup soy sauce
  • 1 cup honey
  • 1 teaspoon cayenne powder
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1 teaspoon whole cumin
  • 1 teaspoon coriander
  • 1 teaspoon celery salt
  • 1 teaspoon freshly ground pepper
  • 1 teaspoon turmeric

Preparation

Step 1

In a large stockpot over medium heat, combine the
garlic, thyme, rosemary, cinnamon and olive oil. Cook,
stirring, for about 5 minutes. Add the tomato paste, ketchup, vinegar, soy sauce and honey, and cook for
another 5 minutes. Stir in the remaining ingredients, and bring to a simmer. Cook for about 40 minutes, at
a low simmer. Remove cinnamon sticks, garlic and fresh herbs before serving.
