Ingredients

    pkg rice noodles

  • 2

    C bean sprouts

  • 2

    T veggie oil

  • 4

    scallions

  • 2

    cloves garlic

  • 2

    t anchovy paste

  • ¾

    lb chicken breast cubed

  • ½

    lb lg shrimp

  • ¼

    C brown sugar

  • 2

    T ketchup

  • 2

    T rice vinegar

  • 2

    lg eggs beaten

  • ¼

    C cilantro

  • ¼

    C peanuts, coarsely chopped

Directions

In a large pot of boiling water cook noodles to directions. Drain and rinse bean sprouts. In lg skillet heat oil over med. heat, add scallions, garlic, anchovy paste, cook 1 min. add chicken and cook 2 min or 4 till almost cooked through. stir in shrimp, brown sugar, ketchup and vinegar and toss to coat. Add drained noodles to pan and cook 3 min or till shrimp and chicken are cooked through and noodles are hot. Pour eggs into skillet and toss to mix You can add bean sprouts right before serving and garnish with cilantro and peanuts, or put bean sprouts on plate and top with chicken mix then add garnish
