Dressings: Vinaigrette

Ingredients

  • 1 small garlic, peeled
  • 2/3 pinches salt
  • 1/3 - 1/2 cup red wine vinegar or lemon juice
  • 1 shallot, minced
  • 1 t Dijon
  • Salt and pepper to taste
  • 1 cup oil

Preparation

Step 1

Mash garlic and add salt. Remove to small jar.
Shake vinegar, shallot, Dijon, salt and pepper.
Whisk 1 cup oil into the mixture.

Classic Vinaigrette

3 ozs red wine vinegar
1/8 t ground black pepper
3/4 t salt
3/4 t sugar
8 ozs vegetable oil

Pour red wine vinegar to 3 oz measurement line. Add black pepper, salt and sugar. Add oil to 11 oz measurement line. Insert lid with plunger into container, turn to closed position. Mix up and down until ingredients are throughly blended. Pour dressing over your favorite mixed salad greens.

Yield: about 1 1/3 cups


Truffle Vinaigrette

Balsamic vinegar
Rice Vinegar
Sugar
Extra Virgin Oil
Truffle Oil

Whisk together with reduced chicken stock.

Celery
Carrots
Leeks
Shallots
Garlic
Parsley
