Ingredients
- 10 oz. salmon
- 2 Tbs. olive oil
- 1 Tbs. fresh lemon juice
- 3 scallions, minced
- 1/4 cup fresh dill, minced
- 1/4 cup fresh parsley, minced
- 1/4 cup white wine
- salt and pepper to taste

Step 1
Preheat oven to 425 degrees. Whisk together olive oil and lemon juice, set aside. Remove any bones and skin from salmon. Place salmon is a roasting dish, season with salt and pepper and pour oil and lemon mixture on top. Allow to sit at room temperature for 10 minutes. Meanwhile, mix together scallions, dill and parsley in a separate bowl and scatter over salmon, generously coating both sides. Pour wine around salmon and roast for 12 minutes, or until the thickest part is almost cooked. Cover the dish with foil and allow to sit for 10 minutes before serving.
