Grouper with tomato almond sauce

Ingredients
- 1/2 cup olive oil
- 1 cup Spanish onions thinly sliced
- 1 tablespoon garlic, minced
- 1/4 teaspoon hot pepper flakes
- 1 teaspoon thyme chopped
- 1/4 cup basil sliced
- 10-12 tomatos, skinned and seeded, canned will do
- 1 teaspoon sugar
- 1/2 cup capers, drained and rinsed
- 1/2 cup almonds, silvered and toasted
- Salt and pepper to taste
- 1 1/2 lbs fresh halibut or red grouper

Preparation
Step 1
Place olive oil and onions in saucepan and soften 10-12 minutes on medium heat. Add garlic and pepper flakes and cook 3-4 additional minutes.
Preheat overn to 350 degrees.
Add thyme, basil, tomatoes, sugar, capers and almonds. Cook at low simmer for about 10 minutes. Cool and reserve. (This can be done a day in advanced.)
Place almond-tomatoes sauce in bottom of ovenproof casserole dish. Lightly brush fish filets with olive oil and season with salt and pepper.
Place filets on top of sauce and bake uncovered for 20-25 minutes.
Serves 4.
