Potato Freezer Rolls

These are our favorite rolls, especially for holidays such as Thanksgiving. I got the recipe years ago from a friend. Not sure why they were called Freezer Rolls. I added the option for Brown & Serve Rolls. KC

Ingredients
- 1 Tbsp Yeast
- 1/2 cup warm water (115-120 degrees)
- 1-2 potatoes, cooked & mashed = 1/2 cup mashed potatoes
- 1/4 cup butter
- 1/4 cup sugar
- 1 1/2 teaspoon salt
- 1 cup milk (scalded)
- 1 egg
- 4-5 cups flour(as needed)
Preparation
Step 1
Mix yeast and warm water in large mixing bowl. Set aside.
Heat milk in pan until scalded. Mix in potatoes, butter, sugar and salt. Let cool. Add to yeast mixture. Add egg. Stir in half of the flour. Mix in most of the remaining flour.
Knead on floured surface until smooth, 4-5 minutes.
Place dough in greased bowl, loosely cover. Let rise in warm place until double, about 1 hour.
Punch down. Let rest 10 minutes. Shape into rolls: form a snake, then tie knot. Put on greased pan or cookie sheet (10x15"). Let rise 30-60 minutes.
Bake 10-12 minutes at 400 degrees, or until golden brown.
**To make Brown and Serve Rolls:
Bake rolls at 325 degrees for about 10 minutes, do not brown. Cool on rack, wrap in foil, label, then freeze. To serve: Thaw rolls in package at room temperature 10-15 minutes. Place on baking sheet and bake at 400 for 10 minutes or until golden brown.
