Ingredients
- 2 T. butter
- 1 T. olive oil
- 1 1/2 pd. white onions peeled, thinly sliced
- 3/4 cup dry white wine
- 1 tomato seeded, diced 1/2 cup
- 4 cups low salt chikcen broth
- 1 oz. thinly sliced prosciutto chopped plus 4 slices
- 1/2 t. fresh thyme or 1/4 dried
Preparation
Step 1
Melt butter with oil in heave large pot. Add onions and saute until golden brown abut 20 min.
Add wine, simmer until wine evaporates about 4 min.
Add tomato and saute 1 min. Remove from heat
Transfer 1 cup onion misture to blender. Add 1 cup chicken broth and puree until smooth. Return to pot. Add remaining 3 cups broth, chopped prosciutto and thyme. Bring soup to boil
REduce heat to medium low aver, and simmer for 30 min.
Preheat broiler. Place 4 prosciutto slices on baking sheet. Sprinkle each with 1 T. cheese. Broil until cheese melts and bubbles and prosciutto is crispy about 1 min. Cut each slice into 6 pieces. Ladle soupinto bowls and top with prosciutto pieces.
