Boneless skinless chicken breasts
Deli ham (as many slices as you have chicken breasts)
Provolone cheese (as many slices as you have chicken breasts)
c. seasoned bread crumbs
c. grated Parmesan cheese
c. fresh parsley, if desired
Flatten the chicken breasts to ¼ inch thickness. Place a slice of ham and a slice of cheese on each piece of chicken. Roll up from the short side and tuck in ends; secure with a toothpick. In a shallow bowl, combine the crumbs, the grated cheese, and the parsley. Pour the milk into another bowl. Dip the chicken into the milk, then roll in the crumb mixture. Place the roll-ups seam side down and bake uncovered at 375º for 35 – 40 minutes or until juices run clear. Remove toothpicks before serving (or at least warn people that they are there). These freeze really well. Just thaw completely in the refrigerator and then cook until juices run clear.
