Ingredients

  • 2 1/2 c sugar
  • 1/8 tsp salt
  • 1/2 c light corn syrup
  • 1/2 c water
  • 2 egg whites
  • 1 1/2 tsp vanilla
  • 3/4 c chopped pecans

Preparation

Step 1

Combine sugar, salt and syrup and water in a heavy saucepan. Cook over medium heat stirring frequently until mixture comes to a boil and sugar is dissolved. Continue cooking until the mixture reaches soft ball stage (240'). Beat egg whites(at room temperature) until foamy. While beating at medium speed slowly pour one third of hot syrup mixture into egg whites. Cook remaining 2/3 syrup mixture to firm ball stage (248') . Slowly pour remaining syrup mixture into egg whites while still beating at medium speed, increase speed to high and beat till stiff peaks form and mixture is firm enough to spread. Stir in vanilla. And pecans. Spread immediately on cooled cake. Yield: enough for one 9 inch 2 layer cake.
