Eggs: Eggs Flamenco

Ingredients

  • 2 T oil
  • 1/2 chopped onion
  • 1 chopped green pepper
  • 1/2 pound sliced smoked sausages
  • 1 cup canned tomatoes
  • Salt and pepper
  • 1 bay leaf
  • 1/2 cup peas
  • 1 cup asparagus
  • Pimento
  • Eggs
  • 2 T sherry

Preparation

Step 1

Saute onion and green pepper in oil for 5 minutes. Add sausages and tomatoes, whirled in blender or mashed, bay leaf, salt and pepper. Cook until tomatoes cook down, sort of thick. Add peas and chopped asparagus, pimento slices. Break eggs carefully over the top to cover. Sprinkle with salt and pepper. Add 2 T sherry.
Bake at 300 degrees for 20-25 minutes or until whites are done.
