Grilled Italian Sausage and Peppers over Penne Pasta

Ingredients

  • ¾

    c chopped onion

  • 1

    t minced garlic

  • 3

    T olive oil

  • 1

    (14-1/2oz) chicken broth

  • ½

    t pepper

  • 1-¼

    lbs mild italian sausage

  • 2

    medium green peppers

  • 8

    oz uncooked penne pasta

  • ¼

    c fresh basil cut in very thin strips

  • c shredded parmesan cheese

Directions

Cook onion and garlic in 2T olive oil in large saucepan over medium heat 5 minutes or till tender. Add chicken broth and pepper. Bring to a boil over high heat. Reduce heat to medium and simmer until reduced to 1 cup about 10 minutes. Brown sausage until no longer pink, add pepper for 6-7 minutes. Cook pasta; drain. Combine pasta, peppers and broth in large bowl; toss to coat. Add basil and sausage and mix well. Top with parmesan cheese.
