Tomato Relish

Ingredients

  • 18 medium tomatoes peeled, seeded and diced
  • 2 cups celery finely chopped
  • 1 cup green bell pepper chopped
  • 1 cup onion finely chopped
  • 1/3 cup salt
  • 2 cups vinegar
  • 1 1/2 cups sugar
  • 1 1/2 teasp mustard seed
  • 1 teasp pepper

Preparation

Step 1

Place the vegetables in a large bowl, sprinkle with salt. Stir until well blended. Let stand

for 30 minutes. Drain, rinse and drain again.

In a large kettle, bring vinegar, sugar, mustard seed and pepper to boil, reduce heat.

Simmer, uncovered for 15 minutes. Add vegetables, return to a boil.

Ladle hot relish into hot jars, leaving 1/4 inch headspace. Adjust caps.

Process for 20 minutes in a boiling water-bath.
