Microwave Cashew Brittle

This is a fast & no fail recipe for those of us who don't want to use candy thermomoters.

Ingredients

  • 1 cup Sugar
  • 1/2 cup Light corn syrup
  • 1 cup Cashews
  • 1 tsp Butter
  • 1 tsp Vanilla
  • 1 tsp Baking soda

Preparation

Step 1

Prepare a cookie sheet sprayed with Pam and set aside. Spray 2 forks with Pam & leave sitting on cookie sheet

In a lg microwave bowl with handle stir together sugar & corn syrup

Microwave on High for 2 1/2 minutes

Stir well

Add in cashews

Microwave on High 2 1/2 minutes

Stir well

Add butter and vanilla

Microwave 45 seconds

Add baking soda

Stir quickly

Pour immediately onto cookie sheet and pull apart with 2 forks, to as thin as possible.

Let set for 30 minutes

Break apart & store in airtight container or Ziploc
