Christmas Breakfast Sausage Casserole

Ingredients

  • 12 slices bread
  • 6 med-lg eggs
  • 3 cups milk
  • 1/4 tsp dry mustard
  • 1 can diced green chile peppers (drained)
  • 1 lb sausage (browned & drained) or pieces of ham
  • 2 cups Pepper Jack cheese
  • 1 bag potato chips (crushed)

Preparation

Step 1

Place 6 slices of bread on bottom of a sprayed dish

Cover with cooked sausage or ham.

Sprinkle with cheese.

Cover with other 6 slices of bread.

Whisk together eggs, milk, dry mustard & salt & pepper to taste.

Pour egg mixture over bread.

Cover & refrigerate overnight.

Next morning sprinkle with crushed potato chips.

Bake @350 degrees for 1 hour or until browned & eggs are cooked completely.

Cut in squares & serve.
