Banana Nut Bread

Ingredients

  • 10 tblsp butter
  • 1 cup mashed ripe bananas (about 2 large bananas)
  • 1/2 cup sour cream
  • 2 lg eggs
  • 1 1/2 teasp vanilla
  • 2 cups cake flour
  • 3/4 cup sugar
  • 1 teasp baking soda
  • 3/4 teasp baking powder
  • 1/2 teasp salt
  • 1 cup walnuts (finely chopped)

Preparation

Step 1

Pre-heat oven to 350 degrees. Prepare a loaf pan by spraying with Pam

Mash the bananas, sour cream, eggs and vanilla with electric mixer

Sift the flour, sugar, baking soda, baking powder and salt into a bowl.

Add the banana mixture in 3 batches, mixing in between each addition. Fold in nuts

Pour batter into loaf pan. Bake until lightly browned and bread bounces back to the touch, about 1 hour 10 minutes. Remove from oven and cool 10 minutes in the pan. Turn out onto a wire rack to cool completely.
