Ingredients
- 1 rotisserie chicken
- 3 cups cornbread stuffing, prepared from mix as directed
- 1 medium onion, diced
- 2 stalks celery, minced
- 2 tablespoons butter
- 1/2 cup chicken broth
- 1/2 cup pecans, chopped
- 1/2 cup dried cranberries
- 1/2 teaspoon poultry seasoning

Preparation
Step 1
Crumble cornbread stuffinf when cool. Set aside. Saute onion and celery in butter. Stir until translucent. Pour in chicken stock and bring to a simmer. Turn off the heat and combine the remaining ingredients including cornbread stuffing. Serve with the rotisserie chicken. Garnish with fresh orange wedges if desired.
