Dry Jerk Seasoning

Allspice and Scotch bonnet peppers are the cornerstones of a great jerk seasoning. I use both of them in my dry and wet rubs. If you like a testier rub, you can always boost it with more Scotch bonnets.

Ingredients
- 1/4 cup allspice
- 1 tablespoon dried thyme
- 1 tablespoon paprika
- 1 tablespoon Hatch chile powder
- 1 teaspoon ancho chile powder
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 1 or 2 dried Scotch bonnet or habanero peppers, crushed
- 1/4 teaspoon freshly ground pepper
- 1 /2 teaspoon salt

With a mortar and pestle, mash all ingredients together, and place into a sealable container until ready to use.
