Ingredients
- 4 pieces chicken,thigh and drumsticks, skin removed
- 1 1/2 tbsp. dijon mustard
- 1 cup bread crumbs
- 1/2 tsp. smoked paprika
- 1/4 tsp. cayenne
- 1/4 tsp. salt
- 1/4 tsp. pepper
Preparation
Step 1
1. Heat oven to 450 degrees. Line a shallow baking pan with foil and coat with olive oil spray.
2. Remove skin from chicken. Pat chicken dry and rub all over with mustard. Stir together the bread crumbs and spices. Dredge chicken in bread crumb mixture.
3. Arrange chicken in a single layer in baking pan. Coat tops with olive oil spray. Bake for 20 minutes. Reduce heat to 425 degrees and bake for another 25 minutes.
