Cyndy's Breakfast Casserole

Ingredients
- Enough cooked bacon to cover the bottom of the casserole dish when broken up (I use the microwave kind. It really calls for a pound of sausage browned and drained, but that's too much trouble)
- 3 C hot cooked grits (this is 4 servings of the quick grits)
- 2 1/2 C shredded cheddar cheese (I probably use more)
- 3 T butter
- 3 eggs, beaten
- 1 1/2 C milk

Preparation
Step 1
Break up the bacon and place in a lightly greased 13 x 9 x 2 dish.
Combine hot grits, cheese, and butter. Stir until melted.
Combine eggs and milk; stir into grits. Pour over bacon. Bake at 350 for 1 hour.
15 servings
I usually make the night before or even 2 nights before.
