Broccoli Cheese Soup

Ingredients

  • 6 c water
  • 3 c fresh broccoli florets or 2-10oz packages frozen
  • 1 medium onion diced
  • 4 chicken bouillon cubes
  • 1/2 c butter
  • 2/3 c flour
  • 1 pint whipping cream
  • 3 c sharp cheddar cheese shredded

Preparation

Step 1

Combine water, broccoli, onion, and bouillon in a large saucepan. Bring to a boil then reduce heat. Simmer covered for 10 minutes or until vegetables are tender. Once broccoli is tender mash part or all with a masher. Melt butter in a small saucepan. Stir in flour and cook over low heat until smooth. Add to broccoli mixture. Cook about 5 minutes stirring until mixture is bubbling. Stir in whipping cream and sharp cheddar cheese. Stir until cheese is melted. Season to taste with salt and pepper.
