Ingredients

    cup white rice (not instant)

  • 1

    medium onion, chopped

  • ¼

    cup oil

  • ¼

    cup flour

  • 10 oz can mushrooms, save mushroom liquid

  • 2

    tsp McKays chicken seasoning

  • cups water

  • cups light cream (half and half)

  • 1

    can fry chick

  • 1

    jar pimento

  • 2

    tbsp parsley

  • ½

    tsp salt

  • ½

    cup slivered almonds (topping)

Directions

Cook rice Saute onion in oil and remove from heat Stir in flour and mushrooms. Add Mushroom liquid, seasoning, water and light cream. Cook until thik (20 minutes) Add rest of ingredients and mix lightly Pour into 2 quart casserole dish Bake uncovered at 350 degrees for 25-30 minutes. Last 15 minutes of baking, sprinkle almonds on top. ALTERNATE red/green pepper or peas
