Cinnamon Shortbread Meltaways

Ingredients

  • Frosting:
  • 1 C butter, softened
  • 1/2 C icing sugar
  • 1/2 t cinnamon extract
  • 1 1/4 C AP flour
  • 1/2 C cornstarch
  • 2 T butter, softened
  • 1 1/2 C icing sugar
  • 2 T milk
  • 1/4 t cinnamon extract
  • 2-3 drops red food colouring, optional
  • Cinnamon hearts

Preparation

Step 1

In a small bowl, cream butter and icing sugar until light and fluffy. Beat in the extract. Combine flour and cornstarch. Gradually add to creamed mixture and mix well.

Shape into 1" balls. Place 2" apart on ungreased baking sheets. Bake at 350 F for 10-12 minutes until bottoms are lightly browned. Remove to wire racks to cool.

In a small bowl, beat butter until fluffy. Add icing sugar, milk, extract, and food colouring (if desired.) Beat until smooth. Spread over cooled cookies. Top with cinnamon hearts.
