Buttermilk Country Biscuits with Ham

Ingredients

  • 2 cups all purpose flour
  • 1 T. baking powder
  • 1 t. dried thyme
  • 1 t. sugar
  • 1/2 t. ground ginger
  • 1/4 t. ground nutmeg
  • 1/4 t. baking soda
  • 1/4 t. salt
  • Freshly ground black pepper to taste
  • 5 T. vegetable shortening
  • 1/2 cup minced cooked ham
  • 2 T. minced green pepper
  • 3/4 cup buttermilk
  • Melted butter

Preparation

Step 1

1. Preheat oven to 425 F.
2. In a large bowl, toss flour with baking powder, thyme, sugar, ginger, nutmeg, baking soda, salt and pepper. Using two knives or a pastry blender, cut in the shortening until mixture resembles coarse meal.
3. Stir in minced ham and green pepper. Stir in buttermilk until mixture hold together. Gather dough into a ball with hands.
4. On a lightly floured surface, knead dough once or twice. Pat into a rectangle 3/4 inch thick. Using a 1 1/2 inch cookie cutter, cut out about 30 circles, using all the dough.
5. Place biscuit circles about 2 inches apart on a baking sheet. Brush tops with melted butter. Bake for 12 minutes or until puffed and golden. To serve, arrange in a decorative basket lined with colorful cloth napkins.
