Onion Cornbread

Ingredients

  • 1/4 cup. butter
  • 1 1/2 c. chopped onion ( about 1 med. )
  • 1 c. sour cream
  • 1/4 tsp. salt
  • 1 c. (4oz.) shredded sharp cheddar cheese, divided
  • 1 pkg. ( 10-12 ) corn muffin mix
  • 1 egg, beaten
  • 1/2 c. milk
  • 1 can ( 8 1/2 oz.) cream style corn

Preparation

Step 1

Preheat oven to 425*. Grease 8" square pan, set aside.

In med. skillet over med. heat, melt butter.. Add onion and saute until tender, about 10 mins. Cool slightly. Add sour cream, salt and 1/2 c. cheese to onions; set aside.

In med. bowl, combine corn muffin mix, egg, milk, corn, stir until smooth.

Spoon batter, in prepared pan. Spoon onion mixture evenly and gently atop the batter. Sprinkle on remaining cheese.

Bake 30- 35 mins. or until toothpick comes out clean.
Cut into 9 pieces. Serve warm.
