Ingredients

  • RASPBERRY VINAIGRETTE
  • 1/2 cup seedless raspberry jam
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil (not virgin)
  • 1/4 tsp salt
  • CANDIED WALNUTS
  • 1/2 cup powdered sugar
  • 1/4 tsp cayenne pepper
  • 1/4 tsp table salt
  • 2 cups walnut
  • AUTUMN SALAD
  • 3 heads Romaine hearts
  • 1/2 cup crumbled feta
  • candied walnuts
  • 1 Granny Smith Apple
  • 1 pear
  • 1/3 cup dried cranberries or cherries

Preparation

Step 1

Mix vinaigrette and store in refrigerator

Walnuts-
Combine sugar, pepper and salt in bowl

Bring 4 cups water to boil.Add nuts and boil 3 minutes, strain and dump onto towel to remove excess water then place in powdered sugar mixture. (do this immediately)

Transfer to baking sheet lined with parchment paper and bake 350 for 16-20 minutes until golden brown.
Cool completely then store.

SALAD
Cut up lettuce and put in ice water for 15 minutes then spin dry. Toss with dressing then add apples, pears, cherries, feta and walnuts
