Ingredients
- 4 cups cucumbers (washed & chopped)
- 2 cups onions (peeled & chopped)
- 1 large green bell pepper (seeded & chopped)
- 1 large red bell pepper (seeded & chopped)
- 1/4 cup pickling salt
- 3 1/2 cups sugar
- 1 3/4 cups cider vinegar
- 1/4 cup water
- 1 tsp turmeric
- 1 tblsp celery seed
- 1 tblsp mustard seed
Preparation
Step 1
Combine cucumbers, onions and peppers in a large bowl; sprinkle with salt and cover with cold water.
Let stand 2 hours; drain throughly; press out excess liquid.
Combine sugar, vinegar, water & spices; heat to boiling.
Add drained vegetables and simmer 10 minutes.
Pack hot into hot half pint jars, leaving 1/4 inch head space.
Wipe rims of jars with wet paper towel & place hot lids & screw on rings.
Process 10 minutes in boiling water bath.
Remove to kitchen towel on counter & allow to cool & seal.
