Ingredients

  • 3 lbs red-skinned potatoes
  • 1 jar roasted red peppers
  • 6 oz. goat cheese
  • 1/3 cup olive oil
  • 1/3 cup fresh basil
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1/2 cup scallion greens
  • 1/3 cup sundried tomatoes

Preparation

Step 1

Boil potatoes 25 minutes, drain & cool. Peel & slice lenghtwise, 1/3" thick. Slice peppers lengthwise. In large bowl stir together goat cheese, olive oil, S&P. Add potatoes, red peppers, scallion, sundried tomatoes & basil. Stir gently.
