Ingredients
- 1 cup sliced onion
- 1 cup diced celery
- 1 cup diced carrots
- 4 pounds chicken thighs
- salt & pepper
- 1 15 oz can tomato sauce
- 1/4 cup lime juice
- 1 tbsp minced chipotle and 1 tsp sauce
- 2 cloves garlic minced
Preparation
Step 1
Arrange vegi's in bottom of slow cooker or casserole.
Season chicken with salt and pepper.
Place chicken over vegetables.
In bowl, whisk together tomato, lime, chipotle and garlic.
Pour sauce over chicken. Cover, cook 6-8 hours on low or 3-4 hours on high. Garnish with cilantro and avacado.
